Onion Bhaji

SERVES:  Serves 10-12

DIFFICULTY:  Easy

Ingredients

1 large onion
1/4tsp turmeric
1/4tsp ground cumin
1 small chillli
1tbsp chopped fresh coriander
50g flour
1/2tsp baking powder
cold water
sunflower oil

Method

Slice the onion and place in a bowl

Add the remaining ingredients leaving out the water

Mix together until the onion slices are coated in flour and spices then add 1 tablespoon of water at a time until you have a batter consistency

Heat 3 tablespoons of sunflower oil in a frying pan.  

Carefully place spoonfuls of the onion mixture into the pan.  

Fry for a couple of minutes then turn over and cook for a further 2 minutes.  

Drain on kitchen paper and serve with Raita
